Summer Sea Glass Menus

Long hot days and endless sunlit evenings call for lots of fresh, light fare to satisfy the hot and hangry*. Sea Glass Chef Andrew Chadwick's summer menu is filled with hyper-local options from surrounding farms and sea, sure to quell those hangrys. Take a cooling BBQ break and enjoy Chef's new summer menu al fresco on the Sea Glass deck.

"Summer menus are all about freshness," says Chef Chadwick. Diners want to keep it light and commemorate the season with the bounty of fresh seafood and produce available from our local farms. There is just no substitute for vine ripened tomatoes or a sweet, freshly picked strawberry. Summer is all about more plant based options and keeping it simple and healthy.

Ode to the Tomato!

From chilled Yellow Tomato Gazpacho with brunoise vegetables to his Heirloom Tomato Salad with burratta, compressed peaches, and white balsamic, Chef Chadwick's Ode to the Tomato rivals that of poet Pablo Nerudas: "without husk, or scale or thorn, grant us the festival of ardent color and all-embracing freshness."

Fruits of the sea!

No shell crackers or bibs needed for Chef Chadwick's signature Lobster Tacos, or local Oysters with cucumber and finger lime, or his Butter Poached Lobster with charred corn, melted leaks, braised greens and puffed wild rice. Local Scallops with corn variations are delectable while Miso Glazed Pollock with kombo cucumbers, charred beans, and char sui eggplant is fresh and sustainable from Out of the Blue.

Classic, Essential (with a modern vibe!)

When hangry sets in sometimes only old school will suffice- Try Chef's Prime Strip Steak with herbed chickpea crisps and charred cauliflower; or because it's hot outside- Beef Tartare with shallot, caper and onion. For traditional "always perfect anytime" try Pan Roasted Chicken with spinach and chicken mousse and potato-pesto puree; or the Sea Glass Burger with Swiss, bacon jam and French onion spread. And because we all need a happy ending: enjoy Chef's Strawberry Shortcake with fresh local berries, small cheesecake rounds, hunks of biscuit, whipped cream, mint and basil puree.
